- Step 1. Making the Wash: Louisiana grown sugar cane molasses mixed with water and yeast.
- Step 2. Fermentation: The yeast eats the sugar in the molasses and produces alcohol
- Step 3. Pot Still Distillation: This distillation strips the alcohol out of the wash producing “low wines” which are around 70 proof.
- Step 4. Column Still Distillation: This distillation purifies the alcohol to over 180 proof.
- Step 5. Barrel Aging: Our rum is aged in oak bourbon barrels.
- Step 6. Blending and Bottling: Depending on the type of rum, we blend rums of various ages for consistency in flavor. The spiced rum is aged with fresh, whole spices for weeks.
